Here’s a delicious and easy recipe to make vegan chickpea nuggets:

Ingredients:

  • 1 can (400g) of chickpeas, drained and rinsed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 carrot, grated
  • 1/2 cup of breadcrumbs (use gluten-free if needed)
  • 1/4 cup of nutritional yeast
  • 2 tablespoons of ground flaxseed mixed with 5 tablespoons of water (flax egg)
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste
  • 2 tablespoons of olive oil (for frying or brushing if baking)
  • Optional: 1/4 cup of chopped fresh parsley or cilantro for added flavor
